The Best Vegetarian Chili Recipe
The best vegetarian chili, as with any chili, is based on beans. Beans are an excellent vegetarian protein source, and I have integrated them into a lot of the food I cook. For this recipe, try to find beans that are not already prepared with any sauce or flavoring. "Goya" brand is always a solid choice, as they have a wide variety of canned beans and lentils to choose from. You may have to look in the international section of your local grocery store to find these.

Ingredients
4 tbsp. of olive oil 1 large chopped onion 3 garlic cloves, chopped 1 15 oz. can tomato sauce 1 16 oz. can pinto beans 1 16 oz. can black beans OR red kidney beans 1 cup vegetable broth 3 fresh tomatoes cut 2 tsp. Cajun seasoning 1 tsp. oregano Salt and pepper
optional or substitutable (based on preference): 4 carrots, peeled and cut 1 zucchini, peeled and cut 1 cup frozen green beans 1 cup frozen or fresh corn
Preparation 1. Heat olive oil in pot. Start by adding the onions until they are clear, then add (but don't burn) the garlic. 2. Begin to add the other ingredients, starting with the tomato sauce and cans of beans. Slow cook at a low heat and cover the pot, to really get the flavor into the sauce and beans. 3. Add salt and pepper to taste, enjoy.
