Celery Soup Recipe
Here's a celery soup recipe that is relatively simple to make. Did you know that eating celery actually burns calories?...Yeah, I'm not sure about that either. Just make sure that you have a blender or a food processor, as that is key to the "cream of celery" aspect of this recipe.
Ingredients
4 cups celery (approximately), chopped 1 small onion, chopped 2 cloves garlic, minced 2 cups vegetable stock 1 tsp vegetable oil 1 cup plain soy milk salt and pepper, to taste
Preparation
1. Heat oil, at medium setting, in large saucepan. Add celery, onion, and garlic, and saute until onion stats to soften.
2. Add vegetable stock, and lower heat. Simmer for about 15 minutes, until vegetables are soft.
3. Transfer mixture to blender or food processor. Blend until desired consistancy is reached.
4. Return creamy mixture to saucepan. Add soy milk and salt/pepper. Continue to stir at low to medium heat, until desired temperature is reached.
