French Onion Soup

When making this French onion soup, make sure that you have about 45 minutes to dedicate to the process. Don't worry, you won't have to "slave over the stove" for that duration, or spend all that time crafting a very complicated recipe. However, you do have to make sure to stir the ingredients so that they do not burn.

A purist may notice that this is not exactly the full prepared soup that you might order at a restaurant. Yes, due to the fact that this is a vegan variation, there is no traditional layer of cheese covering the soup. If you want, you can top off each bowl that you serve with a slice of your favorite cheese. I believe that the traditional choice for this soup is Swiss cheese.

Ingredients

6 yellow onions,
peeled and thinly sliced
2 cloves garlic, minced
2 tbsp olive oil
2 quarts vegetable broth
3 tsp sugar
Salt & pepper
, (amount based on preference)



Preparation

1. Add olive oil and onion to medium sized pot.
Cook at medium heat. Stir frequently and cook for about 10 minutes. Onions should soften, but not brown.

2. Add salt, pepper, and sugar. Cook for an additional 20 minutes, stirring frequently. The onions should now brown, but not burn. Lower the heat if necessary. You can now taste the onions (should be slightly sweet), and adjust seasoning if desired.

3. Add vegetable stock and garlic. Raise heat and bring to a boil. Once the soup has reached the boiling point, reduce the heat once again and simmer for 15 minutes.
