This vegan bread recipe (actually, banana bread is closer to cake) uses bananas to create a nice texture and consistency, emulating something that eggs would usually be used for.
Ingredients:
220g white flour, self-raising (about two cups) 60g margarine (about one-quarter cup) 1-1/2 tsp baking powder 1/2 tsp baking soda 3/4 cup sugar 1 ripe banana 1 tsp vanilla essence 3-1/2 tbsp cold water
Preparation:
1. Preheat over to 350°F(180°C)
2. Mash banana in a large mixing bowl. Add all other ingredients EXCEPT for water.
3. Add water, one tablespoon at a time, while stirring mixture. Mixture should be at stirable constancy but not too watery.
4. Pour mixture into medium-sized greased baking pan. Bake for 45 minutes. Test with fork to make sure it's done (fork should come out clean).
