Vegan Brownie Recipe

The key to making this vegan brownie recipe truely vegan is to check the ingredients in your chocolate chips. Make sure that you make sure there is no mention of "milk" or "whey", if that is what you are trying to avoid. Everything else should be ok, except for the debatable vegan-ness of white sugar, which I discuss in other sections of this site.

It's refreshing to know that you can eat chocolate on a vegan diet, isn't it? This recipe is a testament to the fact that you can eat a 'restricted' diet, without really depriving yourself of anything.

Ingredients

1/2 cup unbleached white flour
1/2 cup whole-wheat pastry flour
1/2 cup maple syrup
1/4 cup soymilk
1-1/2 tsp vanilla extract
1/2 tsp salt
1/2 cup sugar
1 tsp baking powder
1/2 cup cocoa powder
1/2 cup canola oil
1/2 cup semisweet chocolate chips
(check ingredients)

Preparation

1. Preheat oven to 350°F
Grease or non-stick spray a medium sized pan.

2. Mix wet ingredients in medium-sized bowl Mix rest of ingredients (except for chocolate chips) in another bowl

3. Make a "crater" in the center of the dry ingredients bowl, and carefully pour the wet ingredients into it. This is a similar procedure as in my cookie recipe. Mix ingredients, but do not over mix.

4. Add chocolate chips and mix a few more times

5. Pour mixture into pan and bake for approximately 35 minutes. Use a fork or toothpick test to check for readiness. Let the pan completely cool before cutting into individual brownies.
