Vegan Pancakes
Here is the ridiculously simple recipe for vegan pancakes. Although the recipe is one of the easiest that I have stumbled upon, I cannot make any promises in the difficulty of preparation. For as long as I can remember, back into my early childhood, I have had a long history of trying to make pancakes and failing miserably. If this is your first attempt at pancakes, be prepared to ruin a couple...it's part of the fun.
The most important piece of advice, in my opinion, it to make sure that the temperature of the pan is right. Don't get impatient and start laying on the batter until the pan is fully heated. Don't put the stove to the highest setting either. A little bit of practice and you'll find your sweet spot.

Ingredients: 1 cup flour 1 cup soy milk 2 Tbsp. vegetable oil 2 Tbsp. baking powder 1/8 tsp. salt 1 Tbsp. sugar
Preparation 1. Mix all the ingredients together in a bowl. 2. Use a nonstick pan or grease it slightly with a little bit of vegetable oil... this is crucial. 3. Add 1/2 cup of batter at a time. Make the first flip when bubbles have appeared throughout the surface of the pancake. Cook until both sides are golden brown but not burnt. 4. If the pancake is burnt on the surface but gooey on the inside, it's not being cooked properly. Turn the heat down and try again. 5. Serve with maple syrup, or add your favorite toppings.
Basically you have standard pancakes without using eggs and you have subbed in soy milk for dairy milk (you should have soy milk in your house anyway.)
