Vegetarian Casserole Recipe
This vegetarian casserole recipe is extremely simple, and difficult to screw up. It does require some baking time however, so if you are determined to eat immediately, this may not be the dish for you.
This is one of the few times where I will suggest using frozen spinach. Usually I prefer fresh and raw spinach, as I believe that it offers the most in taste as well as in nutritional value. However in the interest of mixing well with the other ingredients, we will used the frozen packaged kind in this case.
Ingredients
1/2 package firm tofu 1 package frozen spinach 1 cup spaghetti sauce, check ingredients! 1 medium onion, chopped 8 oz shredded cheese or soy cheese*, choose your favorite cheese or soy cheese. This is the deciding factor in whether or not this recipe is suitable for vegans.
1. Thaw spinach and drain. Drain tofu and crumble into a mix with spinach.
2. Add sauce and chopped onion. After stirring well, pour into small casserole dish and add half of the total portion of cheese (4 oz).
3. Bake at 350ºF for 20 minutes.Add the remaining 4oz of cheese on top and bake for an additional 10 minutes.
