Vegetarian Lasagna

In theory, this vegetarian lasagna recipe fits into the theme of 'simplicity' that I try to maintain for this site. However, the actually assembly of the lasagna might get a little messy if this is your first time. The ingredients, as it is here are pretty basic, but feel free to include additional herbs and spices as per your preference.

There are many variations of vegetarian lasagna, this one is pretty much fully vegan (depending on the noodles and spaghetti sauce that you choose). Several other variations call for the use of soy cheese or other dairy substitutes. I do not have that much experience with these cheeses, but I know that people's opinions on them are mixed. The texture is the biggest difference that people complain about, as the analog can never be 100% the same as the dairy. Luckily, in this example, we will be using tofu, which just happens to make an excellent alternative to ricotta or cottage cheese.

Ingredients

16-ounce pack of lasagna noodles (check the ingredients, you can find egg-free noodles)
2 28-ounce jars of spaghetti sauce(again, check ingredients for meat, and milk products)
10-ounce frozen chopped spinach(optional)
1 pound tofu, medium
1 tsp oregano
1 tsp parsley
1/2 tsp basil
dash of garlic powder


1.Preheat oven at 350°F (175°C)

2. Drain tofu but do not squeeze out all of the excess water. Mix thoroughly with all of the spices. Ideally, you want to use a food processor here, but it is possible to do this with your hands...just be thorough. The tofu should have the consistency of ricotta cheese, if it is too thick then add some soy milk.

3.Begin assembly in medium-sized pan. Start with one cup of spaghetti sauce. Cover with one layer of uncooked noodles. Add another cup of sauce and top it off with another noodle layer.

4.Add 1/2 tofu mixture, spread evenly. Add 1/2 of the spinach on top of this. Then one more cup of sauce and finally, a layer of noodles.

5.Repeat step 3 adding remaining tofu and spinach. Finish by adding remaining sauce over the last layer of noodles. Make sure that the noodles are fully covered with sauce.

6. Bake for 40 minutes, covered. Uncover and bake for an additional 20 minutes.
