Vegetarian Meatloaf
This vegetarian meatloaf is excellent for those who still have some attachment to the foods they miss. Like I have said before, no meat substitute to date will taste exactly like the real thing. However, this recipe will give you a similar texture, hearty flavor, and protein content as the real thing...without the high fat content.
This recipe calls for TVP (Textured Vegetable Protein), also known as a meat analog or mock meat.

Ingredients
2 cups vegetable broth 1/2 cup ketchup 2 tablespoons soy sauce 2 cups 'meat' crumbles(see note above) 1 cup bread crumbs 1/4 cup ground flaxseed (optional) 1 tablespoon nutritional yeast 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon oregano 1 teaspoon basil
Preparation
1. Preheat oven to 375˚F (195˚C)
2. Mix vegetable broth, ketchup, 'meat' crumbles in a bowl
3. After mixing, let liquids absorb for about 10-15 minutes Then stir in all left over ingredients. Mix well.
4. Pack mixture tightly into small loaf-sized pan. Bake for 45 minutes. Serve with mushroom gravy, or just additional ketchup.
