Vegetarian Quiche Recipe
This vegetarian quiche recipe can be easily prepared in, at most, 30 minutes. In the interest of brevity, I am not going to go into how to bake your own crust here (though we do that in my 'vegan pumpkin pie'). However, I am confident that you will be able to find a ready-made pie crust that is free of animal products. Just check the ingredients of the most simple looking flour crust that you see.
You can get creative with the veggies on this one, if you do not like spinach or if you have something additional in mind. Just make sure that you don't go overboard, it has to all fit within the pie shell!
Ingredients
1 ready-made pie crust, check ingredients 1 pound firm tofu, drained 1 medium onion, finely chopped 2 cloves garlic 1 pound frozen spinach, thawed 1/2 cup soy milk 1/4 tsp spicy mustard 1/2 tsp ground red pepper 1/4 tsp ground nutmeg 3/4 tsp salt 2 tablespoon parmesan or soy parmesan cheese*, optional
Preparation
1. Warm frozen spinach by pan or microwave until soft. In a separate, lightly greased pan, saute onion and garlic at medium heat until golden brown. Add spinach to the onion/garlic mix and stir well.
2. Using a food processor, blend remaining ingredients (except for pie crust, of course!) Blend until smooth and then pour into a large bowl. Add the mixture, from step 1, to the bowl and mix well.
3. Pour entire mix into ready-made crust and bake at 400°F for 35-40 minutes. The filling should be solid, but not burned.
