Vegetarian Vegetable Soup
Does the title, "vegetarian vegetable soup" sound redundant to you? Well that's what I also thought at first, until I realized that most vegetable soup recipes (ironically)are not suitable for vegetarians.
Most searches for "vegetable soup" will lead you to a recipe with some sort of a meat base (beef bouillon cubes, chicken stock, etc...). But it's not necessary to depend on meat to carry the flavor of this soup, as the fresh vegetables should serve this purpose themselves.
Ingredients
3 tablespoons olive oil 1 small onion 3 cloves garlic 2 stalks broccoli 2 stalks celery 10 carrot sticks 2 squashs 1 can tomato sauce 1 tbsp dried basil salt + pepper
Preparation
1.Sauté onions and garlic in olive oil
2.Add vegetables sauté until they start to soften.
3.Add tomato sauce, basil, salt, and pepper.
4. Cook on low to medium heat until vegetables are completely soft
